You should always leave your grass clippings on the surface of the lawn after mowing. Mow weekly so that grass clippings are small and will decompose rapidly.
Grass clippings contain essential nutrients including nitrogen, which is known to have a beneficial effect on soil and the growth of grass.
Mowing heights depend on weather conditions. In the cool, wet periods, grass should be cut shorter, in order to aid drying.
In hot dry periods, the problem is not too much moisture but too little. Mower blades should be raised, leaving the blades of grass tall to shade the roots and prevent them from drying out.
